Ozark Banana Jam Cookies

Ingredients
2 eggs (yolk only)
2 Tbsp. water
¾ lb. butter
¼ cup Filippo Berio Olive Oil
1 cup sugar
6 cups flour
chopped almonds
powdered sugar for dusting

Method
Preheat oven to 400 degrees. Combine egg yolks and water for the egg wash, set aside. In separate bowl, cream together butter, olive oil, and sugar, then stir in flour. Roll dough out to 1/8” thick, cut out cookies (any shape will do) and place on ungreased baking sheet. Brush tops with egg wash & sprinkle with chopped almonds. Bake for 5-7 minutes, do not overcook. Once cooled, spread back side of cookie with jam and sandwich together. Lightly dust with powdered sugar before serving.
