spicy rim salt (you can also mix together 2 Tablespoons
kosher salt and 1 teaspoon chili powder)
2 Tablespoons lime juice
1 jalapeño, sliced
3 ounces tequila (we like Tres Generaciones)
1 cup pineapple juice
1 1/2 ounces Triple Sec
Optional garnish: pineapple wedges and jalapeño slices
Rub rim of glass with a chunk of pineapple and twist the rim in the salt. In a mixing tin filled with ice, combine 2-3 jalapeño slices, muddle to release spice, and lime juice. Add tequila, pineapple juice and Triple Sec. Shake vigorously and pour mixture and ice into the prepared glasses. Garnish with pineapple wedge and jalapeño slice (optional).
